SOUTH AFRICAN RECIPES (TURKEY CURRY POTJIE )

 Turkey curry potjie food cooked in a sizable pot, to enjoy this great  meal is simply add all the ingredients into a slow cooker (or into the oven on a low heat) and leaving it to simmer for a couple of hours until its ready to enjoy.

TRADITIONAL SOUTH AFRICAN (BOBOTIE RECIPE)

Ingredients
-         10ml butter
-         2 onions, sliced
-         1 fairly thick slice crustless bread (white or brown)
-         375 ml milk
-         25 ml oil
  -         100 ml sultanas (don’t replace with raisins – they are too sweet; sultanas are much better for this recipe)

SOUTH AFRICAN RECIPES (SMOKED COD WITH CREAMY PARSLEY SAUCE)

-         2 potatoes mashed
-         1 tbsp margarine or butter
-         1 piece smoked cod.

-         1 tablespoon plain flour or wheat free

Ingredients
       -         2 tablespoon corn flour
       -         2 tablespoon grated onion
       -         700 ml milk
       -         700 ml chicken stock
       -           400 g ground peanuts
       -         2 teaspoon salt
       -         1/4 teaspoon cayenne pepper

UGANDA RECIPES (PEANUT SAUCE OR EBINYEBWA)

Peanut sauce is one of the delicious meals in Uganda. It can be eaten with pumpkin, rice and matoke.
 The sauce can also be served with fried fish, chicken or some dried meat.

  Luwombo is a traditional method of cooking from Uganda. It is both a classic dish of royal dinners and a dish popular throughout Uganda, especially at holiday time.

UGANDA RECIPES (POSHO)

Ingredients
    -         1 cup water
    -         1 tsp salt
    -         1 cup milk
    -         1 cup white cornmeal
Directions
- Boil the water with the salt added in a saucepan.
- In a separate bowl, stir the milk into the white cornmeal
-   Keep stirring until it is smooth.
-   Then slowly pour the cornmeal mixture into the boiling salted water
-   Stir this mixture constantly for a couple of minutes until it starts to thicken.
-   Turn the heat on the stove to low and continue to cook the ugali for    about 15 minutes.
-   Keep cooking and stirring until the ugali is very stiff and thick and pulls away from the sides of the saucepan. Serve with beans

UGANDAN RECIPES (MATOKE)

   Ingredients
     -         3tomatoes, chopped (or canned whole tomatoes, drained)
    -         1chile pepper, chopped (optional)
    -         8 plantains
    -         1 green pepper/ bell pepper, chopped
    -         3 cloves of garlic, crushed
    -         1Lemon juice (optional)
    -         Oil for frying
    -         1onion, chopped
    -          Salt, coriander, cayenne pepper or red pepper (to taste)
    -         1 pound beef ground beef or stew meat cut in bite sized pieces (optional)
    -         2 cups beef broth or beef stock
Directions
- Peel the plantains, cut into cubes, sprinkle with lemon juice, and set aside.
- Heat oil in a sizable pan, fry onion, tomatoes, green pepper, hot pepper, and garlic together. Add spices to taste. Add meat or broth. Continue frying and stirring until the meat is nearly done or until the broth is starting to boil.
- Lower the heat, add plantains, cover and simmer over low heat until

Serve matoke hot.
