Ingredients

2 potatoes mashed

1 tbsp margarine or butter

1 piece smoked cod.

Parsley sauce
-
1 tablespoon plain flour or wheat free

¼ cup fresh parsley chopped

1 tablespoon margarine
-
½ - ¾ cup milk
-
A squeeze lemon juice
-
Salt and pepper
-
¼ cup of milk
-
½ teaspoon minced garlic
Directions
- Boil the potatoes. Peel and roughly chop the potatoes and after they have been on for about 5 minutes, place the cod in a frying pan, just on low and cook for 5 minutes each side.

As the cod is cooking, prepare the
sauce.

Melt the margarine; add the flour to make
a thick paste. Add a little more if needed.

Add the milk to make a sauce, frequent stirring
to reduce lumps, the quantity of milk depends how much flour was used. Keep
stirring and once you get the consistency you like, add in the parsley, salt
and pepper and the lemon juice and keep stirring.

Once the potatoes are boiled, add in
your margarine and milk and mash. Add salt and pepper for taste and the minced
garlic.

Place the mash on a flat plate. Lay the
cod on top and then pour parsley sauce over.
This meal is gluten and wheat free also.
