BURKINA FASO RECIPES (RIZ GRAS - FAT RICE)



This rice dish is called "fat rice" because of the amount of oil used.

Ingredients 

-         4 tomatoes, chopped
-         12 cup oil
-         1 lb beef or 1 lb chicken, cubed
-         2 habanero pepper
-         2 garlic cloves
-         12  onion, finely chopped
-         4 tablespoons tomato paste
-         4 14 cups water
-         1stock seasoning, cube (or chicken bouillon)
-         2 12 cups long grain white rice
-         Salt and pepper

Method

    -         Put the habaneros, garlic, tomatoes and onion into a food processor and blend until you get a nice paste.  Heat the oil over medium heat and add the paste to the pan for 7 minutes, then remove from the fire and set aside.
    -         Rinse the food processor with a little bit of water (about 1/2 to 1 cup), put the water in a separate pot along with the meat. Bring the meat and water to a boil, in a medium heat for about 15 minutes.
    -         Add the meat to the pan containing the paste together with tomato paste, water and stock cube and stir.
     -         Wash the rice with clean water add to the pot, cover and bring to a boil in a medium heat for about 15 minutes or more until the water has been absorbed.
    -         Garnish with thin slices of onion.
