ANGOLAN RECIPES (VEGETABLE SOUP WITH GRAINS)

 












Ingredients
    -         2 sweet potatoes, peeled and cubed

    -         1medium onion, chopped
    -         1 medium fennel, chopped
     -         1/2 head of cauliflower cut into bit-sized pieces
     -         4 tomatoes, chopped
     -         1 can of chickpeas, with liquid
     -         1 whole wheat couscous
     -         ½ teaspoon ground coriander
     -         ½ teaspoon turmeric
     -         ½ teaspoon cinnamon
     -          ½ teaspoon ginger powder
     -            ½ teaspoon cumin (jeera)
     -         2-3 cups water
    -         Salt to taste
Method
-         Put all ingredients in a sizable pot or saucepan and bring to boil 30 minutes.
-         Lower the heat, cover and simmer for 30 minutes, or until the vegetables are tender to your liking.
-          You can garnish with chopped cilantro. Serve hot in soup bowls.
