EGYPTIAN KOSHARY

Koshary is one of the most prominent recipes in Egypt. It's a traditional food that is delicious and savory.
Ingredient

      -         1 tablespoon vegetable oil
      -         5 onions, minced
      -         2 cups uncooked white rice
      -         1 packet macaroni
      -              4 tomatoes, diced
      -         1/2 cup tomato paste
      -         1 cup lentils, soaked in water beforehand
      -         1/2 teaspoon salt

      -         3 cups water
      -         1 1/2 teaspoon salt 
      -         2 1/2 teaspoons cumin, ground
      -         1/4 teaspoon cayenne pepper
      -           2 garlic cloves, minced
      -         3 tablespoons white vinegar
      -         1 teaspoon black pepper, ground

Method
   -          Heat one tablespoon vegetable oil in a saucepan over  low heat. Stir the rice, coated with the oil, for a few minutes.
    -             Add 3 cups water and a teaspoon of salt. Allow to boil in low heat, cover, and simmer for about 20 minutes until the rice is tender and all the liquid has been absorbed.
    -         Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until the it has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander. Return macaroni to cooking pot, cover and keep warm.

-         Soak the lentils for 40minutes, then drain and rinse, twice. Bring two cups of water, boil the lentils and cover in low heat. Simmer till lentil is tender at least for 20 minutes with half teaspoon of salt.
-         Add one tablespoon of oil into a sizeable frying pan and heat. Add the onions and cook on low heat for about 8 minutes until the onions are browned. Add garlic and cook for another minute and then drain the mixture on a paper towel.
     -         Place half of the onion mixture into a saucepan with the vinegar, chopped tomatoes, tomato paste, pepper, 2 teaspoons of salt, the cumin and the cayenne pepper, and bring to a boil. Let mixture be a thick sauce. If it feels like a paste, add half a cup of boiling water. Reduce heat to low heat and simmer for 15 minutes.
      -          Serve by placing a spoonful of rice, then macaroni, and then the lentils on serving plates. Sprinkle with some of the browned onions, then top with tomato sauce.
      -         To serve, do so in a layering pattern by placing a serving spoon of rice, topping it with a serving spoon of macaroni, followed by the same amount of lentils. Sprinkle the countenance with some of the browned onions, and then top with tomato sauce.
