Melon stew is another delicious meal that can go with either with eba, boiled yam, rice, plantain etc. Melon stew is quite different from your traditional egusi soup, due to the method of preparation.
Ingredients
Melon
Meat
Palm oil
Fish
Tomatoes
Onions
Pepper
Vegetable/Scent leaf
(optional)
Crayfish (optional)
Salt to taste
Direction
1.
Pour the melon into a pan, and add a
little water to it.
2.
Place your pot on the fire, heat the palm
oil for 3 minutes, but don’t allow it to over-heat.
3.
Add onions, tomatoes, and pepper. Stir
and cover the pot.
4.
After about 4-5minutes add the melon,
and allow it to boil for about 4minutes.
5. After
that, uncover the pot and stir.
6.
Add your scent leaf, and it is ready to
serve.
