KENYA RECIPES (MUKIMO)

Mukimo is one of the meals prepared by Kenyan people. It used to be eaten during various occasions and ceremonies in earlier days. The dish involves cooking different ingredients and mashing them together.
This mukimo dish is nutritious because it has protein, starch and veggies in it.

                  Ingredients:
                                     -         2kg Potatoes
                                     -         1/2kg maize
                                     -         1kg peas
                                    -         Margarine
                                    -       1/2kg Pumpkin leaves(without the stalks)
                                    -         Salt
      Method
   -         Wash the maize and peas with clean water.
   -         Put in a clean pot, add water to cover the pot, cook until soft and set aside. 
   -         Peel the potatoes, cut in cubes, wash and boil the potatoes in salty water, cook for 15-20 minutes until soft. 

   -         Peel the malenga leaves (pumpkin) and cut, wash, add in another separate pot, boil the pumpkin leaves in salty water for about 5 minutes. Drain off the water and blend to form a green thick paste.
    -         When all the ingredients are ready and hot, combine in one suitable pot and mash, add margarine to give it nice flavor and smooth, combined until well corporated  and potato fully mashed checking that the salt is enough.
