Matumbo is one of Kenya’s delicious dishes with flavors of garlic, red onion, chilli and dhania. It can be served with Mukimo or Ugali. It tastes good when it is hot.
Ingredients

1kg Matumbo (Washed)

1 medium onion diced
-
3 Garlic cloves diced
-
30ml Oil
-
1 colored peppers- green, yellow, red,
diced
-
3 large tomatoes(Chopped)

Thyme
-
11/2 tablespoon of
all spice mix or beef cube
-
Fresh coriander, diced
-
Salt to taste
Method
-
Cook the whole matumbo for about 3 hours
or until soft to your liking by simmering in water.

When cooked, cool the matumbo and cut
into your desired shape and size. It’s easier to cut them to a uniform size
when cooked whole.

Pound your garlic cloves in a kinu into
a paste. Dice your onions and put these two in a sufuria with some heated oil.
Add some salt and tomatoes and let these saute and simmer for about 5 minutes
until they are all soft.

Add the beef cube or all spice mix and
allow for a few seconds. Add the peppers and cook for 1 minute, then the cooked
matumbo which you should also mix into the mixture.

Add hot water and allow to simmer (the
food) for 3 minutes.

Add finely
chopped coriander and mix it in, then cook for a further 2 minutes to allow the gravy to thicken.
Serve hot with rice or ugali with a side of greens.
