ETHIOPIAN RECIPES (AZIFA)

Azifa is a green lentil salad that's perfect on its own or mixed with injera.
 
Ingredients
-         1 medium tomato chopped
-         2 cups of lentils
-         1 spring onions sliced

    -         1 hot green pepper
    -         2 tablespoon fresh lemon juice
    -           2 tablespoon olive oil
    -         2 garlic cloves chopped
    -         ¼ teaspoon ginger, minced (not powdered)
    -         Fresh ground black pepper.
    -         Salt to taste.

Method
    -         Rinse lentils and boil them in enough water to cover completely.

    -         When they are soft, drain the water and allow them to cool.
Salad Dressing:
    -         Combine olive oil, lemon juice, salt and pepper, garlic, ginger and parsley.
    -         Add salt and freshly ground pepper to taste.
    -         Whisk well.
    -         Mix the dressing with tomato, spring onion, and hot pepper;
    -         Mix the lentils and dressing together.
    -         Refrigerate for a couple of hours.
    -         Serve with pita bread.
