BOILED PLANTAIN WITH PALM OIL AND PEPPER SAUCE

Plantain is one of the nutritious staple foods in the tropical region of the world. It contains dietary fibre, potassium, vitamins, high in starch and low in sugar content. It could serve as a substitute for potato.
There are different ways of preparing plantain- porridge, chips, roasted plantain (grilled over charcoal), and boiled plantain, eaten with either egg sauce, stew, with vegetable sauce, or red oil.  
Ingredients

    -         Plantain
    -         Red oil
    -         Smoked fish
    -         Onion
    -         Salt to taste
    -         Fresh pepper
    -         Utazi (optional)
Method
    -         Wash the unripe plantain, cut into two or more pieces, place them into the pot, add water to cover the plantain and drop on heat to cook for about 30 minutes.

-         Note: it’s advisable to cook them with the back (peels) to retain the nutrient content
    -         With your fork, check  from time to time to see if it is well softened. At this point you will notice the peels turning brown and the inside becoming more yellow, which shows that it is well cooked. Plantain gets harder when it cools down, so make sure you cook it to become very soft before bringing it down.
    -         Put down from heat and peel it      
    -         Serve with red oil or any choice of sauce, vegetable sauce or stew
To prepare the oil and pepper sauce
    -         Heat the oil in a pan or pot for 3minutes.
    -         Add onion, fresh pepper and fish.
    -         Add salt to taste.
    -       Lastly, add utazi if you like.
