LIBERIAN PALM NUT SOUP

  Palm nut soup or palm butter soup is one of  the favorites in West Africa. The soup is very popular in Liberia, Nigeria, Ghana, Sierra Leone and Guinea. There are many different ways of preparing this soup.
Ingredients:
     -         2 onions, grated
     -         Meat
     -         2 cloves garlic, minced
     -         2 smoked fishes (or use any meat)
     -         3 fresh tomatoes, mashed
     -         1 tsp black pepper
     -         1 can of palm nut cream  (You can get in your African stores)
     -         Chili powder
     -         Salt to taste
     -         Stock cube
     -         Fresh chilies

     -         1 cup of chopped green onion (optional)
Direction:
-         Wash the meat and smoked fish with hot water, and with your hands, cut into pieces.
-          Per boil the meat for 8minutes, add stock cube, onion, with black    pepper.
-         Add garlic, tomatoes and onions and pour the palm nuts cream in the pot.
-         Add one liter of water.
-          Add smoked fish, chili powder (optional) and salt to taste.
-         Add the fresh chilies and cover. Let it simmer for 30 minutes or more.
-         It is ready when the soup thickens and the red oil appears on the surface of the soup.
-         You can serve the palm nut soup with rice, or fufu.
