LIBERIAN CHUCK RICE AND GRAVY


 Ingredient
        -          11/2 cups vegetable oil
        -          Any choice meat (beef, chicken, fish)
        -          Shrimp
         -          1/2  cup okra chopped
         -           1/2  bag spinach 

         -          1 red pepper
         -          3 cups of rice
         -          1 habanero pepper
         -          1 green pepper
         -          1 medium onion chopped
         -          1 teaspoon garlic
         -          1 teaspoon black pepper
         -          1 teaspoon garlic salt
         -          2 stock cubes
         -          1 tomato diced
         -          1 cup of water

          -          1 teaspoon tomato paste
Method
    -         Wash and blend the onion and all the pepper set aside.
    -         Heat vegetable oil, add the blended ingredients, slice yellow onion, add to the pot, together with garlic, black pepper, garlic salt and stock cubes.
     -         Dice tomato and to the pot, add cup of water, tomato paste and allow for  20minutes to dry up, use any choice of meat, add shrimp, fish, beef or chicken.
     -         Sprinkle the garlic salt, black pepper, on top of the meat and fry, add the fried chicken, beef or fish to the mixture and allow to cook on a low heat for 14minutes, and it is ready after.


To prepare the chuck rice
     -         Parboil the rice very well and set aside or follow the instruction on the package. Wash okra and spinach, fried them for 7minutes, and after that, blend them together.
     -         After blending, pour the mixture on top the rice and mix very well. The rice will change color.

      Ready to serve.
