This dish
can be prepared with thick tomato sauce with cooked eggs, not be fried, and it
should not be overcooked. The white has to be soft.
Ingredients

chopped tomato

Tbsp tomato puree

red bell pepper chop

onion chop

tablespoon parsley

Tablespoon brown sugar

few Tablespoon olive oil

Tablespoon Harissa
Spices:

1/2 teaspoon cumin
-
1
Tablespoon paprika
-
2
Teaspoon turmeric
-
1
Teaspoon cinnamon

1/2 teaspoon black pepper

Salt
to taste
Method

In
a large pan heat olive oil, add onion, fry for about 5 minutes, or till it
becomes tender and golden.

Add
pepper and continue frying for 5 minutes on medium heat. While stirring, add
garlic.

Add
chopped tomato together with tomato puree, sugar, salt, black pepper, harissa
and spices.

Add
half of the chopped parsley. Mix well and cook for another 5minutes. If you
like very spicy foods, add some Cayenne
pepper or chili.

When liquid has reduced to half add eggs
one by one. Make sure they sit on the sauce and do not touch the bottom of the
pan. Cover and cook for about 5 minutes on medium heat. At the end add the rest
of the chopped parsley.
