ANGOLA FRIED WHITE RICE WITH VEGETABLES

Ingredients 
-         2 cups cooked white rice
-         14 cup carrot, chopped
-         12 cup sweet pepper, chopped (red, green, yellow peppers to make colorful)

-         1 tablespoon green onion, chopped
-         14 cup corn
-         14 cup peas
-         1 teaspoon salt
-         1 tablespoon light soy sauce
-         1 pinch vegetable seasoning (mushroom seasoning)
-         2 tablespoons extra virgin olive oil
-         1 shallot, chopped
-         14 cup carrot, chopped
Method
    -         Heat pan with oil and cook shallots until brown.

-         Add rice and stir well, then add salt. Cook about 6 minutes,
-         Then add vegetables. Season with soy sauce and vegetable seasoning. Cook another 6 minutes over medium heat.
    -         Then add green onions. Season if needed.
Serve piping hot.
