Omena is one of the delicious meals in Kenya. There are different ways of preparing it. Either you fry the fish before cooking or cook without frying, both methods are good; depends on your choice.
Ingredients

cups of omena (fish)

cup cooking oil

kilo tomatoes

large onions chopped

Salt
to taste

cup of milk
Method

Wash the omena with cold water and set aside, ensure
they dry well. This you can achieve before the time you actually need to cook
them so that they can dry well enough.

Place in a pan and heat enough cooking oil, throw in
chopped onions, then add the omena.

Add salt, tomatoes, tomato paste and spices. Add a
little water to prevent them from sticking and boning.

Stir
gently to avoid crushing the fish.

Add the milk and simmer for about 25minutes.

The milk forms the gravy.

Dry-fry omena
dish. Serve with ugali and sukuma wiki (rice).
