KENYA RECIPES (MATOKE)

Green bananas or plantains, one of the delicious dishes in Kenya.  They are sold in local green grocers or supermarkets. This delicious meal can be  cooked separately or with potatoes, depending on your choice.
You can check whether they are cooked by piercing with a fork. Once done, remove and serve with a side dish/stew.

There are two method that can be use to peel them
i) Hold each piece and start peeling with knife from top to bottom or,
ii) Cut off both ends then cut along the skin of each piece. Peel off the skin as though a ripe banana.
Add the peeled pieces to clean water and wash.
Ingredients:
     -         Plantain (peeled)
     -         Onion chopped
     -         Bell pepper chopped
     -         Peeled potatoes
    -         Tomatoes
    -         Dania/coriander
    -         Crushed garlic (optional)
    -         Cooking oil
    -         Salt
    -         Stock cube
    -         Curry powder
    -         Ground dhana jeera (tumeric, coriander & cumin seeds)
Method
- Peel the plantains, cut into cubes and set aside.

- Heat oil in sizable pan, add chopped onions and cook till tender.
-  Add the chopped bell pepper and garlic and cook for another 2 minutes. Add potatoes, cook for 3minutes.
-  Add the tomatoes and dania/coriander, stirring to prevent the potatoes from sticking to the pan.
-  Add ground dhana jeera or a mixture of ground tumeric, coriander and cumin seeds.  Adding spice depends on how you want the dish to be.
-  Once the tomatoes are cooked, add a little water for the green bananas and bring to a boil.
-  Pour in the plantain, then add salt and stock cube, curry powder. Cover and simmer over low heat until plantains are tender and are done
