GENFO – ETHIOPIAN BARLEY PORRIDGE

Genfo is a dish prepared with bula and wheat floor. Sometimes it is    served when you go to visit families who have just had a baby born into the household. It is served for the first month or 40 days after the baby is born.

Ingredients
     -         Wheat and bula flour
     -           Salt
     -         1teaspoon berbere
     -         1 tablespoon kibe
     -         Water 1 litre

Method
    -           In a dry pan add the wheat flour and slowly dry roast for 3-5minutes.
    -         Boil enough water in large pan, remove about 250ml of boiling water and set aside.
    -         The water should be slowly added. Add the toasted wheat flour to the large pan and start mixing, keep the pan on a very low heat and keep mixing.
    -         Add a little touch of the remaining boiled water, keep the lid on and cook for about 30minutes.

   -         Keep an eye on it and stir often.
   -         In a small bowl add bula flour and a little cold water and mix, add the bula paste to the pan and mix in, keep mixing and cooking for 15minutes and add salt.
   -         In a serving bowl add the genfo and make a well in the centre.
   -         Melt the butter and pour in the well, then add the berbere together with the butter and mix.
   -         Ready to serve.
