LIBERIAN RECIPES (PALAVA SAUCE)

 Ingredient
    -         Kotommire
    -         2 smoked fish
    -         3 big fresh tomato (sliced)
    -         1 medium onion (sliced)
    -         2 Chili pepper
    -         Red oil

    -         Stock cube
    -         2 Ginger blend
    -         2 Garlic blend
    -         Meat
    -         1 tin tomato paste
    -         1 cup melon
Method
    -         Heat palm oil in a cooking pot for 3minutes, add onion and stir.

    -         Add meat and stir together with the onion for 5minutes, add tomato paste, garlic, ginger, chili pepper stir and simmer for 12minutes.
    -         Add stock cube, uncover it, add the leaves and cover. Allow to simmer until it is tender for 10minutes.
     -           Add a little water to the grounded melon and add to pot. Allow to simmer for 5 minutes before stirring in low heat.
     -         Stir slowly, add the fish and stir gently and taste for salt.
Serve with rice, boiled yam and plantain.
