Chicken kabebe is another way of roasting chicken which you can also enjoy.
Ingredient

Boneless or skinless chicken meat cut into cubed
•
Juice of ½ lemon
•
3 garlic clove, roughly chopped
•
Fresh ginger
•
Red pepper
•
2 teaspoon olive or vegetable oil
•
1 medium onion, cut into small pieces
•
6 large fresh tomatoes
•
1 green capsicum, cut into small pieces
•
Oregano
•
Honey (optional)
•
Spring onions
•
Bamboo sticks
Method
of preparation

Soak bamboo sticks in water for at least 30 minutes before
preparing the kebabs. This prevents the wood from burning.

Grind the garlic, ginger, lemon juice, oil, oregano, pepper
and spring onions to a paste in a food processor. Add the honey and oil, then blend
again. Pour the mixture over the cubed chicken and leave to marinate for at
least 1 hr, but preferably overnight.

Thread the ingredients onto the sticks. Start with a piece
of chicken and alternate with a vegetable (including the tomatoes). Be sure to
end the stick with a piece of chicken. Refrigerate if not using immediately.

Place kebabs on a very clean, hot barbecue or under the
grill and cook for about 5 minutes on each side.

Turn the kebabs frequently and baste with the marinade from
time to time until evenly cooked. Arrange on a platter, scatter with chopped
spring onion and eat with your fingers.
