YAM RECIPES (YAM PORRIDGE WITH VEGETABLES)
Yam Porridge with vegetables is a very tasty and delicious meal you have to try out. It is prepared with a combination of yams and fresh green vegetables; a sure healthy way to eat yam.
Yam Porridge with vegetables
ingredients:
- 1 medium sized tuber of yam
- 500 grams spinach/flutes pumpkin leaves(ugu)
- 2 cooking spoonful palm Oil
- 1 pepper (scotch bonnet /atarodo)
- 2 tablespoonful ground crayfish
- 1 bouillon/stock cube
- 1 onion bulb
- Smoked or cooked dried fish(optional)
- Salt to taste
Before cooking Yam & Vegetable- 1 medium sized tuber of yam

- 1 bouillon/stock cube
- 1 onion bulb

1.
Cut and peel the yam tuber into 2
inch cubes. Wash the yam cubes and place in a sizeable pot.

Wash and cut the vegetables, leave to defrost a little bit and
cut into small pieces. Then when fully defrosted, wring out the excess water.
3.
Cut the onions into tiny pieces. Grind or
blend the chilli pepper. Put in a separate pot and set aside.
Cooking Directions
1.
Pour
enough water to cover the yam cubes and cook till the cubes are soft and the
water is a bit like porridge.
2.
Now,
pour out the water from the pot, leaving the yam cubes in the pot. Cover the
pot to retain the heat.
3.
Add
some water from the yam (about 1 cooking spoon) to the pot containing the
vegetables. Cook till the vegetable is softened by the heat. Be careful not to
overcook the vegetable.
4.
Pour
the cooked vegetables and other ingredients into the pot containing the yam
cubes. Add the palm oil and salt to taste.
5.
Stir
with a wooden spoon till all the ingredients have mixed well.
Yam Porridge with Vegetables is usually eaten anytime of the day.
Serve with any soft drink of your choice.
