CAMEROONIAN RECIPES (ELEPHANT SOUP)

Elephant soup is very delicious and tasty. It’s a meal you will enjoy with any swallow that you find convenient.
Ingredients

  • 1/2 pound of Biltong
  • 6 cups of Consomme
  • 2 onions, finely chopped
  • 1 cup shelled, roasted peanuts
  • 1 cup boiled Lentils
  • 1 small Leek, finely chopped
  • 1 cup of Wumubu Mushrooms
  • 2 tablespoons of butter
  • Salt and black pepper to taste
Directions
1.    Wash the biltong or dried meat in hot water, and cut it into bite-sized pieces.
2.    In a large pot or dutch oven, combine the meat with enough cold water to cover it, and cook over a low heat for 20-30 minutes.
3.    Add the consomme and beef broth and simmer for 2 hours.
4.    Add the onions, peanuts, lentils, mushrooms, and leek and cook.
5.    Adjust the seasoning. Add the butter and cream. Serve.
