There are two (2) different ways to prepare pepper sauce: one that you can
prepare with heat and the other with little or no heat.
Preparation
1.
Wash and chop the onions, pepper and
tomatoes into very tiny pieces. If you have mortar and pestle, then no need to
cut the pepper, just pound it or blend coarsely (not smooth)with the chopped
onions.
2.
When the pepper, onions and tomatoes
have medium smoothness, transfer to a bowl. Heat up the palm oil until hot. Add the chopped
onions , pepper and tomatoes and stir fry for a few minutes.
Note: If the oil is congealed or solidified,
place the container in a bowl of hot water for some time to melt it. You can
also melt it in the microwave before use. You can increase the quantity of
pepper if you prefer your pepper sauce very hot.
3.
Then, add the ground crayfish and also stir
fry for a few seconds.
Note: Frying the ground crayfish, gives the sauce a unique taste and also gives it a darker color.
