SAUCE RECIPES (PEPPER SAUCE)

Pepper Sauce is a tasty, spicy sauce made with hot peppers. It is specially used for eating roasted or boiled plantain, boiled or roasted yam and potatoes. It is very easy to prepare and is made off the stove.
You can rely on the pepper sauce, eaten with any of the above mentioned recipes, to warm you up on a cold day.
Ingredients
 - 1 tomato (optional, it balances the heat of the pepper)
- 3 habanero pepper or fresh chilli pepper
 -1 medium onion
 -1 teaspoonful ground crayfish(optional, it gives the sauce different taste )
 -2 tablespoonful vegetable oil or palm oil(depending on your preference)
 -1 small stock cube
 -Salt to taste
                                                                                     

There are two (2) different  ways to prepare pepper sauce: one that you can prepare with heat and the other with little or no heat.

Preparation
1.     Wash and chop the onions, pepper and tomatoes into very tiny pieces. If you have mortar and pestle, then no need to cut the pepper, just pound it or blend coarsely (not smooth)with the chopped onions.
2.     When the pepper, onions and tomatoes have medium smoothness, transfer to a bowl. Heat up the palm oil until hot. Add the chopped onions , pepper and tomatoes and stir fry for a few minutes.
Note: If the oil is congealed or solidified, place the container in a bowl of hot water for some time to melt it. You can also melt it in the microwave before use. You can increase the quantity of pepper if you prefer your pepper sauce very hot.
3.      Then, add the ground crayfish and also stir fry for a few seconds.
Note: Frying the ground crayfish, gives the sauce a unique taste and also gives  it a darker color.
4.     Add the stock cube and salt to taste. Mix thoroughly and after 30 seconds, your sauce is ready.


Second Preparation

 1.  Blend the peppers and onions  coarsely( you should be able to see bits of the pepper and onion) and scoop into a bowl.
2.  Add the ground crayfish ,red palm oil and salt to taste. Mix thoroughly and the sauce is ready for use.
     Pepper sauce tastes really good and serves as a quick dip for several foods.
